I currently am sitting on 42 gallons of sours aged in seven different six gallon carboys since April 2016. I am slightly nervous about over carbonating these when I bottle and ruining them after being so patient. The last two IPAs I have done I have mixed one ounce of priming super per gallon of beer and both of them were well over carbonated. Anyone have any suggestions on how I should carbonate these long aged wild ales?
